Sunday Baking

I made some cake today, a Victoria Sponge. I had some homemade jam to use up, and although I would have preferred to make something more festive, what better way to use up jam than with a basic sponge? Perfectly simple but delicious, recipe below:-
Gather ingredients - you will need 225g of sugar, butter & self raising flour, as well as 4 eggs. Preheat oven to 180 degrees C.

Cream together butter & sugar with electric whisk, until pale & fluffy. Beat eggs in a separate bowl. Add a bit of flour and a bit of egg in stages, folding lightly in with the creamed mixture. Don't just chuck it all the eggs and flour in at once, this will separate the mixture, and you want to retain as much air as possible from the whisking!

Once folded, pour/spoon mixture into baking tray(s), and bake for 30 mins! Leave to half cool on cooling racks, then add a thick layer of jam, cut & serve whilst still warm! Yummy!

  1. You need to lay off the cake

  2. yuuuum!

  3. A classic and a winner! I've made a bit of homemade jam - I may also do this to use it up!

Wow, at Anonymous, what a jerk. The joy of people being anonymously awful to strangers online, what a lovely person they must be. You are beautiful, ignore what any coward has to say.

  16. I love baking cakes! I haven't baked one for ages.. :( And I love the photos! what camera do you use?

  17. I posted before as Mary J. but actually you know me as Mary R. (My middle initial is J).
I suggest that you just delete all hateful comments. They really don't add anything of value to you, this blog, or this world.
I think you're terrificly talented and have a great sense of fashion. Hurray for Georgina! There are many out here who have respect and admiration for you!

  18. No Neta you don't get it.. she is beautiful. Skinny doesnt automatically give you an "I am beautiful" passcard.

Beautiful comes in all shapes and sizes. If you don't agree, don't come here and try to knock other people down to make your own insecurities feel better for a brief moment.
